Chickpea Quinoa Curry

Chickpea Quinoa Curry

1/2 onion (diced)
2 cloves garlic
1 can chickpeas (drained and rinsed)
1 can diced tomatoes (drained)
1 1/3 cup cooked quinoa
2 1/2 tsp curry powder
chili flakes to taste

1. On medium heat cook the onions and garlic until the onion starts to become clear.
2. Add the tomatoes and chickpeas and cook for a couple of minutes.
3. Add the quinoa, curry and chili and heat until warm.
