Egg-Free Cookie Dough Bites (Coconut and Rocky Road)
1 cup butter/margarine
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
1 cup flour
1/2 tsp salt
1/2 cup coconut
1/2 cup chocolate chips
3 jumbo marshmallows
1. Blend together softened butter, vanilla and sugars.
2. Mix in flour and salt.
3. Divide dough in half. Mix coconut into one half and 1/4 cup of chocolate chips and marshmallows (cut into small pieces) into the other half.
4. Let chill in fridge for 30 minutes. When dough has firmed up, roll it into tablespoon sized balls.
5. Melt the other 1/4 cup of chocolate chips and drizzle or pipe on to balls.

Chocolate Chip, Pecan, Coconut Cookies
Chocolate Chip, Pecan, Coconut Cookies
3/4 cup sugar
3/4 cup brown sugar
1 cup butter/margarine
2 tsp vanilla
1 egg
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/3 cup quick oats
3/4 cup chocolate chips
3/4 cup pecans
1/3 coconut
9-11 minutes @ 375
1. (Heat oven to 375) Cream butter in bowl with sugar, brown sugar, egg and vanilla
2. Mix in flour, baking soda and salt.
3. Add oats, chocolate chips, pecans and coconut. (stir in with a spoon)
4. Make rough balls of dough about a soup spoon's scoop in size. Space out on baking sheet and bake for 9-11 minutes at 375. Makes about 40 cookies.
