Nusstangerl

140g ground nuts (I used almonds)
120g sugar
1 egg
1/2 tsp vanilla

20-25 min @ 350

1. Mix the sugar and ground nuts together.
2. Add in the egg and vanilla and stir everything together until mixed well.
3. Line a 9"x9" pan with parchment paper and evenly spread the mix on top. (make sure it is well lined or the mix with stick to your pan)
4. Bake for 20-25 minutes at 350. Once it has cooled a bit score gently into 16 pieces.

Apple Pecan Cake

Apple Pecan Cake
1 1/2 cup oil
1 1/2 cup sugar
1/2 cup brown sugar
3 eggs
3 cup flour
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
2 tsp vanilla
1 cup pecans
3 1/2 cup granny smith apples (peeled and diced coarsely)

1 hour 45 minutes @ 325

Caramel Sauce
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1/2 cup whipping cream
1/2 tsp vanilla

1. Mix together the oil and sugars.
2. Add in the eggs one at a time.
3. Add the flour, baking soda, salt, cinnamon and nutmeg.
4. Fold in the vanilla, nuts and apples.
5. Fill an angel food pan with the mixture and bake for an hour and 45 minutes at 325.
6. For the caramel sauce you need to cook all of the ingredients in a pan until warm and dissolved. Serve over the cake.

Brownies

Brownies
1 1/3 cup butter/margarine
2 cup sugar
4 eggs
1/4 cup corn syrup
2 tsp vanilla
1 1/2 cup flour
3/4 cup + 2 tbsp cocoa
1 1/4 tsp salt
1 tsp baking powder
1 1/2 cup chopped walnuts

35-40 minutes @ 350

Chocolate Frosting
2 tbsp butter
1/4 cup semisweet chocolate
2 tbsp warm water
2 tsp vanilla
2 cup icing sugar

1. Mix together the butter and the sugar.
2. Mix in the eggs, corn syrup and vanilla.
3. Sift together the flour, cocoa, salt and baking powder. Gradually add the dry ingredients to the wet ingredients.
4. Stir in the walnuts.
5. Spread in a pan and bake for 35-40 minutes at 350.
6. For frosting, melt the butter and the chocolate in double broiler. Once melted add in water and vanilla.
7. Take off the heat and whisk in the icing sugar.

8. Once the brownie has cooled, top it with the frosting.

Turtle Sugar Cookies

Turtle Sugar Cookies
1 cup butter/margarine
1 cup sugar
1 egg
1 tsp vanilla
2 tsp baking powder
3 cups flour

1 heaping cup of caramels
1 cup chocolate chips
1 cup pecans

7-9 minutes at 375


1. Blend together butter, sugar, egg and vanilla.
2. Mix in flour and baking powder.
3. Roll out to 1/4" thickness and cut into shapes.
4. Space out on cookie sheet and bake for about 7.5 minutes at 375.
 5. Melt caramels and drizzle on cookies. Stick pecans on the still soft caramel and then drizzle melted chocolate on top.

Granny C's Banana Muffins

Banana Muffins
2 very ripe bananas
3/4 tsp baking soda
1/2 cup oil
1 cup brown sugar
4 tbsp of milk + 1 tsp lemon juice (or 4 tbsp buttermilk)
2 cup flour
1 tsp baking powder
1 tsp cinnamon
1 cup nuts/chocolate chips (optional)

20 minutes @ 400

1. Mix bananas and baking soda together.
2. Add oil, brown sugar and milk.
3. Mix in flour, baking powder and cinnamon just until blended.
4. Evenly spoon into muffin tin. (should fill 12)
5. Bake at 400 for 20 minutes.

Chocolate Chip, Pecan, Coconut Cookies

Chocolate Chip, Pecan, Coconut Cookies 

3/4 cup sugar
3/4 cup brown sugar
1 cup butter/margarine
2 tsp vanilla
1 egg
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/3 cup quick oats
3/4 cup chocolate chips
3/4 cup pecans
1/3 coconut

9-11 minutes @ 375


1. (Heat oven to 375) Cream butter in bowl with sugar, brown sugar, egg and vanilla





2. Mix in flour, baking soda and salt.

3. Add oats, chocolate chips, pecans and coconut. (stir in with a spoon)





4. Make rough balls of dough about a soup spoon's scoop in size. Space out on baking sheet and bake for 9-11 minutes at 375. Makes about 40 cookies.
